18 Homemade Lunch Ideas + The Weekend Digress

Holy shit, what a boring weekend I had.
But before we get into ALL THAT, I want to share a quick list of at-home lunch ideas. I recently have found myself desperate for good, homemade lunches but seem to draw a complete blank every time the clock strikes noon Mon-Fri. If I happen to have leftovers, great! But it’s rare because Zac always eats 1.5 servings which usually leaves me with a .5 serving. I’m trying to get creative and thoughtful with thinking ahead for lunch, so I put out a bat signal on Instagram yesterday, and my audience delivered.
The NUMBER ONE write-in was tuna or chicken salad, which, duh. Tuna and chicken salad are so personal that I’m not even going to bother listing out how I like mine — the choice is yours and yours alone.
I will, however, share some of the ideas that sounded the best to me. Some are actual recipes, but most are just ingredient combinations that are easy and nutritious. Bookmark this letter so you can revisit it each week to get inspired and decide what’s on your own personal Ladies Who Lunch menu!
Tuna or chicken salad (#1)
Taco salad with desired toppings (cook ground meat ahead of time to use throughout the week)
Scrambled eggs + cheese + salsa + corn tortilla
Mediterranean bowls or wraps (so many recipes online. Use homemade or store bought tzatziki)
Egg roll in a bowl (Brocc Your Body)
Pita stuffed with hummus, feta, and veggies
Instant mexican rice + salsa + black beans + avo + cheese
Sweet potato + ground beef + avo + salsa
Quinoa + veggies + soy-ginger dressing
Big batch of soup eaten throughout the week
Brown rice + avo + arugula + lemon juice + salt
Frozen chicken or turkey burgers + bagged salad + dressing
